I love different kind of berry pies. My favourite one is this very simple blueberry pie. I haven’t found simpler blueberry pie recipe so I say that this is “The Simplest Blueberry Pie”. In Finnish we have many words for this pie; “mustikkakukko” and “mustikkarättänä” are one of those.
I think this is a healthy berry pie recipe because it includes a lot of blueberries and rye flour. That way I can always allow myself to eat this pie more. I know it also includes butter and sugar but let’s not concentrate on them 😉 Blueberries and rye are superfood and that’s the main thing!
Dough:
- 1 dl sugar
- 4 dl rye flour
- 1 tsp baking powder
- 200 g butter
Filling:
- 1 l blueberries
- 1 dl sugar
- 3 tbsp potato flour
Mix sugar, rye flour and baking powder in a bowl. Add soft butter and mix the dough. Mix blueberries, sugar and potato flour in another bowl. Butter a round casserole (diameter about 25 cm). Spread blueberry filling on the bottom of the casserole. After that spread the dough on top of the filling. Press the dough. Bake the pie in a 160° oven for 1 hour. Serve the warm pie with vanilla ice cream (my favourite), vanilla sauce or whipped cream.
Note! You can also take first 3/4 of the dough and make the bottom of the pie out of that. Then spread the filling on top of the dough bottom. Lastly spread the rest of the dough on top of the filling. If you do the pie like this, then bake it in a 200° oven for one hour.
